Bianco is an artisanal hand-made white blooming mold, soft ripened, cheese made from raw cow's milk. With a mild flavor and creamy texture, Bianco resembles a Brie-style cheese. Bianco is aged for at least 60 days and is the only of its kind available in the area.

Bianco is best served at room temperature; it is a very versatile cheese - it goes excellent with crackers, bread, fresh fruit, and jam; it bakes beautifully and can also be served with fruit or used as a cooking ingredient. It pairs well with a Riesling or Chardonnay.
